I don’t think the ones from Aldi are soft but you could probably find something on Amazon or at an online German food shop.

I have lived in the US for over 20+ years (Frankfurt/Main is my place❤️) and since most German stores have disappeared, I am now using Lifeway Farmer Cheese in place of Quark. In some places they also sell it as Twarog. Although a lot more expensive and not quite the same, it works for cheesecake and other light desserts. Try it!
